How can I turn off the attempt that Spell Catcher makes to expand a phone number (say 2085551212 into (208) 555-1212) ?

Hi Rick,
Open Spell Catcher's Settings dialog and go to the "Shorthand Expansions" panel.
Near the bottom of the panel you'll see the Telephone Expansion settings. Just remove all the "###" from the field and close the dialog by pressing the OK button.
That will do the trick,
