I currently have a SC Shorthand registered for DDATE which inserts todays long date

How can I get Apple Mail to run DDATE when ever I start a new email message?

TIA

I'm not so sure there's a way to do that without using AppleScript or something like that. Spell Catcher has no way to know when a new email message is opened.
