Since I’m using UK English to spell check, it would be nice if I could use the date shortcut to input UK-style dates eg, 28 September 2003, 28/9/03.

Hi Clive,
Provisions have been made for that... I'll send you a small configuration file that allows you to create any data/time string format you want on Monday.
The feature is just a little too complicated to build into Spell Catcher's settings dialog.
